Sam Lambert - Of Slam Tacos fame, Sam has been delivering hearty umami cuisine and has always been one of the first chefs we trial our more experimental bits on - always our go to chef to getting big bold flavours on the plate.

Kat Kocsis - Forager & baker extraordinair. pickpocketing some skills from her time at Noma, Kat has been foraging, fermenting and always pushing the limits with daring cookery. Bringing the best of the seasonal findings onto our menu…

The Menu - If our first collab was about introducing koji, our second is about using its transforming (and genuinely magic) powers to bring completely new flavours and ideas into our dishes.  A fully vegetarian (contains dairy + egg) tasting menu of 6 servings and a secret koji aperitif cocktail, from the best local produce, some foraged fortunes and a whole lot of umami. The event has long tables allowing groups to share the koji love.

One thing’s for sure - it ain’t your usual Christmas menu. Though there’s a bit of sage, for good measure.
