Steps

  1.  Fry beans with garlic and spices

  2. Crush avocado and make guacamole

  3. Toast tortillas

  4. Party!

How to make

First fry the chopped garlic and the spices on moderate heat until fragrant and the garlic is golden. Then immediately add the drained beans (if you wait the garlic turns bitter). Continue on moderate heat for 5 - 8 minutes, until cooked through. Crush gently with back of a wooden spoon whilst cooking and season to taste.

Scoop the avocado out with a spoon and put in a bowl (or a mortar and pestle if you feel authentic). Squeeeze the lime on, mix with the chopped garlic and onion and add a tablespoon of 火Hyi for a gentle kick.

Place the beans, guacamole and creme fraiche in separate bowls and place on table and garnish with the fresh herbs. When everything else is ready toast the tortillas in a dry pan on moderate/high heat, they should puff up slightly and get some brown (but not burned) spots. Aim for 1 minute on each side.

Let each person build their own taco, layering beans, guacamole, creme fraiche and 火Hyi. Now that's a party!

Ingredients

Tacos:

8-12 corn tortillas (try blue corn, it is both delicious and nutritious)


Beans:

800g Black Beans, rinsed and drained

2-3 cloves garlic, finely chopped

2 teaspoons cumin

1 teaspoon smoked paprika 

Salt/pepper to taste


The sauces:

火Hyi

150g plant based creme fraiche (or coconut yoghurt)

1 small clove garlic, finely chopped

2 avocados, halved and stoned

1 lime

1 small white onion, finely chopped

A generous amount of chopped coriander leaves, fresh mint or both
